This is skilled work requiring the instruction and supervision of inmate workers in the preparation of meals and associated logistical activities.

Receives and analyzes menu instructions; Directs inmate workers in the preparation of meals, cleaning of pots, pans and utensils;Maintains the food service security keys; Receives and maintains accountability of kitchen tools; Directs the cleaning and operator maintenance of kitchen equipment;Directs sanitation of the kitchen;Ensure that items delivered to the Food Service Section are stored properly and that adequate invoices are filed upon receipt, ensuring accurate pricing from vendors;Maintains documentation regarding inmate special diets, and temporary medical diets;Informs Food Service Manager of all changes and deletions to medical diets by the Medical Section occurring during the tour of duty; Maintains monthly inventory records, as well as ordering for the assigned kitchen; and,Operates equipment such as stacked convection ovens, steam cabinets, tilt fry pan, commercial gas range, commercial grill, double deep fry machine, commercial deli slicer, gear driven electric mixer, proofing box, large volume capability washing equipment, range hood fire suppression system, commercial microwave, commercial toaster, computer and standard office equipment.
SUPPLEMENTAL INFORMATION
Walking, talking, stooping, kneeling, bending, reaching, and gripping.
Incumbent may be required move and lift up to 50 lbs.
(boxes, utensils, equipment, etc.
) for extended periods of time; vocal communication is required for expressing or exchanging ideas by means of the spoken word; hearing is required to perceive information at normal spoken word levels; visual acuity is required for preparing and analyzing written or digital data, determining the accuracy and thoroughness of work, and observing general surroundings and activities and, position requires the ability to stand and walk for long periods of time.
